I have all my contacts, calenders etc from my google account. I basically add my gmail info from within the email setup on the iphone. I sync everything except mail, for which i use the gmail app. I assume hotmail/outlook/live has something similar in functionality.

I use the onedrive app on my iphone. i disable icloud syncing for pics. You can set onedrive to auto backup photos. Iphone does have hotspot provided your plan covers that. Not sure on the scanning to onenote but there are a bunch of photo scanning apps out there.
