As it turns out, the best method for us was WDS with MDT and we had to install the ADK but they rolled out flawlessly to the Surface Pro 3 tablets. Many people said you had to turn off the Secure Boot option in the firmware but we didn't even have to do that. We set it up with LiteTouch and all we had to enter was the computer name and WDS did the rest. Thanks for the help and pointing me in the right direction!

Using the Microsoft Tools (MDT/ADK) allows for installing on UEFI/GPT systems with no intervention....And congrats on the completed process....
