I tried a couple of Metro apps like Pocket Recorder that all seemed to work great...while I was in the app. As soon as tried to do something else, they stopped recording. Now, I just use the standard sound recorder app from the desktop. This runs in the background just fine. It lacks the flashy UI but gets the job done.

I'm with you on this. I prefer to use built-in applications and tend to avoid store applications unless they're compelling.
