Hey, I was wondering if anyone knew whether adding accounts to our tablets took away space and if so, how much? Thanks.

Yes, each account has some overhead, how much depends on what personal files are stored and what Modern UI Apps are installed by each account. Bas overhead with just Windows System and User Defaults is 200-800MB (some of this is dependent on Computing Environment - Enterprise AD Accounts have more overhead then local accounts).
