How Do You Customize Your Pen?

Now that we have the capability to customize the Surface Pen functions, I was wondering:

1) What customized application did you select for the single-click? Double-click? Press and hold?
2) Where do you find the applications? For example, I would like the single-click to launch the Settings (app?). Where do I find it when I browse?

I have the same question... I'd like to open Outlook when I double click. I got the single click configured to open Chrome.
